Dredging Tip

Dredging is taking a piece of meat and coating it in a dry ingredient.  Most often, people tend to use flour to dredge.  When I explored the Paleo lifestyle, I eliminated wheat flour from my diet and learned that I love dredging with potato starch.  Now, I would use potato starch to dredge with, even in the absence of the need or desire to eliminate wheat from your diet.  I love the texture that it gives the meat and best of all, it cleans up WAAAAYYY easier than flour.  You know how flour turns to glue when you try to clean it up with water?  Well, potato starch just dissolves beautifully in water and clean up is a breeze!  For an example of how to use this in a recipe, try my Bruschetta Baked Three Cheese Chicken.
