Spicy Scone Breakfast Sandwich

Just a quick follow up on yesterday’s post on Cheesy Pepper Savory Scones. For this morning’s breakfast, I made this Spicy Scone Breakfast Sandwich re-purposing yesterday’s scone into a home for my breakfast sandwich. Instead of bread or an english muffin, I simply made a breakfast sandwich by slicing the scone into a bottom half and top half and toasted it. I spread some butter and mayo on it and then added a fried egg, a piece of bacon and some sliced tomatoes. Cheese would also be good. MMMMM….. so quick, easy and delicious.

Spicy Scone Breakfast Sandwich
A quick, tasty breakfast sandwich that is filling.
Ingredients
- 1 slice of bacon
- 1 tsp butter
- 1 egg large
- 1 Cheesy Pepper Savory Scone
- 1 tsp butter
- 1 tbsp mayonnaise
- 2 slices of tomato
- 1/4 avocado sliced
Instructions

Place a small skillet on your stove top and turn burner to medium. Add the bacon and cook until done.

In another skillet on medium heat, melt the butter and add the egg to fry to desired state.

While the egg and bacon are cooking, slice the scone in half to form a top half and a bottom half and put in the toaster to toast.

Once the scone is toasted, spread the butter and mayonnaise on it.

Add the fried egg, bacon, tomato and avocado and then top with the top half of the scone.
