Three Cheese Ham Broccoli Quiche

Well it has been a long time since my last post because I have returned to work full time and haven’t had much time for blogging. This Three Cheese Ham Broccoli Quiche though is a story to be told! It is so creamy, decadent and delicious.
Finding a new balance between my blog and working has proven to be a bit of a challenge this month. I seem to have found a bit of a rhythm now and will keep posting at least once a week. I enjoy sharing my recipes with you and reading your messages about how they turned out for you. Please don’t hesitate to send me questions if things don’t work out for you or if you are unsure about the steps involved. I am always happy to talk food!
For this Three Cheese Ham Broccoli Quiche, I used a Tenderflake Pie Crust. I have never been a pastry maker so I just use a frozen pie shell. My more talented followers can make theirs from scratch which would undoubtedly be even better! For my gluten free readers, all you need to do to make this gluten free is to make this as a crustless quiche.
Method
I preheat my oven to 425 F and pull out a skillet.
I cube up some ham steak into quarter inch cubes and cut up broccoli into small bite sized pieces. Make sure you make the broccoli pieces approximately the same size so they cook easily. Finely chop some shallots (you could use onion if you don’t have shallots). Heat up the skillet on medium heat and add a little bit of olive oil. Add the ham and veggies to the skillet and saute for 5 – 10 minutes in order to soften the broccoli a bit. If you don’t mind firm veggies in your quiche, or if you are pressed for time, you can eliminate this step. Just toss the ham, broccoli and shallots into the quiche mixture cold. Otherwise, cook the ham and veggies for 5 to 10 minutes, turn off the skillet and set aside so that you can move on to mixing the eggs and milk.
Next, get a large bowl or large capacity measuring bowl with a spout in order to make pouring into the pie crust easier. First, I add 3 large eggs to the bowl and whisk them together with milk, salt and pepper. Then, I add cubes of cream cheese and boursin cheese along with grated applewood smoked cheddar. If you don’t have boursin or applewood smoked cheddar, you can just use regular cheddar. I do recommend using the cream cheese because it adds a creaminess to the quiche that you simply don’t get without it. Finally, to that mixture, I add the cooked ham and veggie mixture and stir to fully combine.
Carefully pour the egg mixture into the pie shell making sure not to over fill it or you will have a mess on your hands. I do put my pie shell on a cookie sheet first, just in case there is some spillage in the oven. Make sure that the egg mixture is spread evenly into the pie shell because that will help the quiche to cook evenly.
Place in the oven at 425 for 15 minutes and then reduce the heat to 325 F and bake for about another 40 minutes. Keep an eye on it. The quiche is done when the centre is set and the top is nicely browned. Let it sit for at least ten minutes to allow it set up a bit before cutting.
MMMMM…… and the upside is that you have leftovers for lunch! An easy meal that keeps on giving all week.
